
Cinco De Mayo is this week so today I’m sharing my favorite Mexican recipes that I’m always making. Cinco De Mayo might be my favorite holiday food wise. My love for Mexican food knows no bounds; I would eat it everyday if I could, and I’m not exaggerating. I’ve made all these recipes at least once and highly recommend them. Chicken Enchiladas by Gimmie Some Oven
Enchiladas are my favorite food ever, and I really like this recipe from Ali (a Kansas City local now living in Barcelona!). I like how she includes beans and green chilis in her filling along with the chicken. And definitely make the time to whip up the homemade enchilada sauce.

Chipotle Black Bean Roasted Veggie Enchilada Casserole by Ambitious Kitchen
Enchiladas, but in casserole form. You know we love our casseroles here in the Midwest. This is actually a great vegetarian option and easier to assemble than regular enchiladas. She uses roasted veggies and chipotle peppers in her sauce. So good!

Best Guacamole by Two Peas and Their Pod
I can actually vouch that this is the BEST guacamole recipe. I always get compliments on this when I bring it to gatherings (or when we used to gather, that is). This recipe doesn’t have tomatoes, but does include red onion, cilantro and jalapeño. The key to perfect guacamole is to add enough salt. So taste as you go!

Easy Chicken Tacos by Damn Delicious
If you’re looking to keep your celebration simple, try this recipe for chicken tacos. It’s just a solid, easy recipe that comes together super fast. I like that this recipe uses thighs which are juicer than chicken breasts. You can add any toppings you like, but I really like having some homemade pico for these tacos.

Pitcher Style Margaritas For A Crowd by Pinch of Yum
I couldn’t do a Cinco de Mayo recipe round-up without including my favorite recipe for margaritas (best drink ever!). This may make me sound like a snob, but I just can’t do margaritas made with a mix. They are just too sweet for me. This recipe is super simple (just simple syrup, lime juice and tequila), but you do need A LOT of limes. I recommend this citrus juicer to make the process go quicker. And always, lots of salt on the rim.

Spaghetti Squash Taco Bake by Eating Bird Food
If you’re looking to keep your Cinco de Mayo menu on the healthier side, this spaghetti squash taco bake is the best. Or if you just want to save all your carbs for chips and salsa! You can bake the spaghetti squash earlier to save some time. This recipe also makes a large batch so you’ll have lunch leftovers for the rest of the week.

This is another healthy recipe for you. These cod fish tacos have crunch from the slaw and creaminess from the sauce that’s made lighter with greek yogurt. These are our favorite corn tortillas that don’t break. We get them at Whole Foods.

Turkey Tacos by Two Peas and Their Pod
Can you tell I have favorite recipe bloggers! Maria’s recipes never let me down, and this easy recipe for turkey tacos is so good. Along with the spices, Maria adds green chilis to the turkey meat which gives it some spice. I like to add homemade pico, guacamole and a squeeze of lime to mine.

Restaurant Style Salsa by The Pioneer Woman
I’ve made this recipe for salsa too many times to count. It’s my favorite! If you like the little bowls of salsa they serve before your meal at any Tex Mex restaurant, you’ll love this salsa.

Black Bean Sweet Potato Enchiladas by Cookie and Kate
These vegetarian enchiladas are made with store bought salsa verde which makes them easy to throw together (just roast the sweet potato the night before). I like how Kate’s recipes don’t rely on a ton of cheese and use whole food ingredients.
