
I don’t know about you, but I’m always looking for new healthy dinner recipes to cook for my family. With that in mind, I thought I would share the recipes we cooked for dinner last week to provide you some inspiration. I may make this a regular series here on the blog.
When I’m meal planning, I like to pick meals from different cuisines for variety. We really love Mexican and make that once per week, and we also have pizza and a movie night every Friday. I fill in the rest of the week from there.
I don’t usually cook on Saturday nights, but we were leaving for vacation the next day and were planning on eating out for the entire week.

MONDAY

Healthy Orange Chicken From Eating Bird Food
I love orange chicken but usually find it a little heavy for my taste. This healthy orange chicken was so delicious. The orange flavor really came through. It was a bit of an undertaking for a weeknight me (it took me an hour to prepare), but I do recommend it if you have the time! We served ours with rice and roasted broccoli.
TUESDAY

Sheet Pan Roasted Veggie Tacos from Ambitious Kitchen
I always like to plan at least one vegetarian meal per week, and you can’t go wrong with tacos. These ones were filled with a spiced roasted veggie and black bean mix, creamy avocado, and a delicious creamy jalapeño sauce. We added some cotija cheese to ours, too.
WEDNESDAY

Balsamic Salmon From Well Plated
I’m always looking for simple ways to cook salmon since it’s such a quick and healthy main dish. This recipe was super simple to put together and made for a quick and yummy weeknight meal. We served ours with crispy fingerling potatoes (just potatoes cut in half and cooked at 400 degrees for 45 minutes) and roasted brussels sprouts.
THURSDAY

Crockpot Italian Sloppy Joes From Skinnytaste
My family loves any meal with Italian flavors so I knew this would be a hit. This is basically garlic bread topped with a chicken sausage and tomato mixture that gets broiled with some mozzarella cheese. My kids don’t love everything mixed together so I served theirs deconstructed with the garlic bread and sausage mixture separate (weirdos!)
FRIDAY

Capriccoisa Pizza From Recipe Tin Eats
This link isn’t a recipe per se, but a collection of pizza topping ideas you can reference. We usually make pepperoni or sausage pizza (sometimes with pineapple!), but I felt like changing it up this week. Capriccoisa pizza is topped with olives, ham, mushrooms, and artichokes. We used a storebought pizza dough and sauce from Whole Foods.
SATURDAY

Corned Beef And Cabbage From The Suburban Soapbox
For St. Patrick’s Day each year, I like to cook a big festive Irish meal. This year, we’ll be out of town so I decided to do ours a little early. This corned beef recipe was delicious. Along with the carrots and cabbage in the recipe, we also served ours with some mashed potatoes and locally made Irish Soda Bread. So good!
