Dinner is my favorite meal of the day. I look forward to sitting down with my little family to talk about our day over a nice meal. It may be chaotic at times, and there may be complaints about the food occasionally; but that’s life with kids. I am one of those cooks that loves trying new recipes, especially for dinner, so when I make a recipe more than a couple times, you know it’s GOOD. The recipes in this post are our go-to recipes from my favorite recipe blogs. They are fairly simple to prepare and taste delicious. Some require more time than others, but most can be made in under 30 minutes. I hope the recipes on this list become some of your family favorites as well.

I don’t think you necessarily need a recipe for turkey tacos, but I really really like this one. The addition of tomato sauce gives them that sauciness and prevents that dry crumbly texture that lean ground meat can have.
Eating Bird Food One Pot Pasta
This is a family favorite that can be made with mostly pantry ingredients. Sometimes we skip the mushrooms if we can’t make it to the store. I like that the veggies are included so I don’t have to prepare a side dish. This is a pretty simple recipe so use good quality tomato sauce because it’s the main flavor. I like Rao’s which we usually buy in a two pack at Costco.
Cookie and Kate Thai Red Curry With Vegetables
I love curries made with creamy coconut milk. Cookie and Kate is our go-to for vegetarian recipes that are full of vegetables. Watch the spice level of your curry paste; we once used too much, and it was way too spicy for the kids.
Damn Delicious Easy Chicken Tacos
Here’s another simple taco recipe we make often. This one uses chicken thighs instead of breasts so the meat is juicy and not too dry. We like topping ours with fresh pico, queso fresco, and a simple guacamole made with avocado, lime, and salt.
Firecracker Salmon With Peach Avocado Salsa
I’m low key obsessed with Monique’s blog. I have three of her recipes on this list! We eat salmon once a week so I have a few recipes I rotate between. This one is a mix of sweet and spicy (adjust the spice level for your own tastes) and has a fresh, fruity salsa that’s served on top. When peaches aren’t in season, we use mango instead.
Skinnytaste Chicken Curry With Coconut Milk
It wasn’t till my late 20s that I started enjoying curries, and now they are like comfort food to me. I love having a warming bowl of chicken curry over rice in the winter months. This one takes a bit to cook (about 45 minutes total) but it’s worth it. We add cauliflower to ours for more veggies.
Ambitious Kitchen Vegan Stir Fry Sesame Noodles With Chickpeas
I’ve made this easy vegan recipe so many times. It has chickpeas for protein and tons of veggies. I love the sauce and the addition of cashews for crunch. Make sure to rinse your rice noodles after cooking or the starch will make the dish gloopy.
Ina Garten Perfect Roast Chicken
I just made this recipe for New Year’s Day. It’s not a weeknight recipe (unless you have the time) as it takes a good hour and a half to roast, but it makes a lovely Sunday dinner. The vegetables caramelize in the fat from the chicken and are scrumptious. We either add potatoes to the veggies or serve ours with fresh bread to complete this meal.
Two Peas and Their Pod Black Bean Quinoa Enchilada Bake
I’ve been making this recipe for over 10 years. Enchiladas are one of my favorite foods, but they take a bit of time to make. This casserole is a delicious way to enjoy those same flavors in a more healthy dish. And if you’re not a quinoa fan, this may convert you.
Ambitious Kitchen Honey Lemon Garlic Salmon
I’ve made this dish probably thirty times. This is the recipe I make when I’m running to the store real quick to buy ingredients for dinner. The salmon is baked in this delicious sweet and mustardy sauce. We usually serve ours with a side of asparagus or broccoli and some fresh bread.
