
We are gearing up for a busy couple weeks ahead as the kids are on spring break, and we have two short trips coming up. This weekend, we are traveling down to Portland for a quick getaway. I’m excited to visit our old stomping grounds and favorite eateries. And later this month, we are flying to Kansas City to spend time with family. I can’t wait to see everyone; it’s been too long.
Spring has sprung here in Seattle, and I’m mesmerized by the beautiful blooms that seem to pop up out of nowhere. I hope you are enjoying springtime wherever you are reading this.
STYLE
I’m currently styling outfits using my spring capsule wardrobe, and I can’t tell you how much easier it is getting dressed these past two weeks. I’m mixing and matching all my favorites and really loving every outfit. Here’s six outfits I wore last week. All outfit links can be found on the Daily Looks page of my blog.
FOOD
I’m back into my obsession with Caroline Chamber’s Substack for our dinners. If you’re not familiar, her newsletter is called What To Cook When You Don’t Feel Like Cooking. Each week she sends out a new recipe that takes less than an hour (often way less) using minimal dishes (hallelujah) and makes an entire meal (no worrying about side dishes.) Every recipe I’ve tried has been absolutely delicious. The dishes taste like restaurant quality but are totally approachable and family friendly. The subscription costs $5 per month, but, in my opinion, it’s totally worth it.
Here’s a roundup of the recipes we cooked this week:
One Pan Roasted Chicken, Cauliflower, and Potatoes // We started off the week on a healthy note with this sheet pan dinner. Everything bakes on one pan, and you whip up the green sauce while it’s cooking. I used the leftovers for lunches, too.
Cheesy Polenta Bowls with Kielbasa // Polenta is one of my favorite foods so I had to try this recipe. So so yummy; this is my kind of comfort food.
30 Minute Honey Gochujang Glazed Salmon & Broccoli Bowls // We’ll definitely be repeating this one soon. After dinner was finished, my family was literally picking the extra salmon bits from the pan like a pack of animals.
Beef Enchilada Casserole // We midwesterners love a casserole. This one had way more veggies than the average covered dish, and it was quick to put together.
One Pot Pantry Pasta // This is the second time I’ve made this super easy pasta dish. It requires very little prep (just chopping an onion.) It’s like a fancy and healthier hamburger helper.
ENTERTAINMENT
First up, early last week, I finished Good Inside by Dr. Becky, and I can’t recommend it enough. If every parent parented this way, the world would be a much better place.
I also breezed through this book called Romantic Comedy by Curtis Sittenfeld. The protagonist is a writer for an SNL style sketch comedy show who falls in love with one of the show’s host. It’s cute, quippy, and I love the little references to Kansas City which is where she grew up.
I never miss an episode of the Mel Robbins podcast, and I was particularly moved by this episode on what makes a good life based on a the longest study of happiness.
I also recently started this new series on Here’s Where It Get’s Interesting, a podcast by Sharon McMahon. This series is about a race related murder and subsequent trial in the Atlanta in 1913. These docuseries episodes are my favorites from this podcast. She has several more in her archives to listen to.
