I recently made this pumpkin pasta recipe, and it is fall comfort food dreams. The recipe uses a touch of brown butter that makes it seem indulgent, but it’s still pretty healthy. It includes greens, fresh herbs, and peptitas for crunch. It’s a quick, but fancy, one pan vegetarian meal.
The Best Healthy Turkey Chili from Ambitious Kitchen
I make this turkey recipe a few times during the fall and winter season, and I actually made it for Halloween this year as well. It’s got a little spice from the cayenne pepper, but we usually halve it so it’s not too spicy for the kids. We like topping ours with sour cream and cheese and serving cornbread alongside.
Chicken Curry With Coconut Milk from Skinnytaste
As I’ve gotten older, I’ve become more and more obsessed with all the curries. This chicken curry has a little creaminess from the coconut milk. The recipe uses chicken thighs which are cooked in the sauce and become nice and tender. We serve ours over a mixture of rice and cauliflower rice.
Easy White Chicken Chili from Two Peas And Their Pod
I love Maria’s family friendly recipes, and this one for white chicken chili looks so good. You can even make it in the slow cooker and have dinner ready to go when you get home for the day. I plan on topping ours with sour cream, cilantro, and extra lime juice.
Lemony Chicken Soup from Lillie Eats and Tells
This lemon chicken soup is made creamy from blended cauliflower (genius!) and has tons of fresh lemon flavor. It’s especially comforting on a cold evening or when you’ve got the sniffles. We serve ours with some fresh bread.

I love the savory and sweet flavor combo in this sheet pan meal. My kids love the honey mustard chicken (they are a bit iffy on the brussels sprouts, though) We serve ours with a carb like rice or fresh bread for a complete meal.

I’m pretty much sold on any recipe that has the word ‘taco’ in the title so I’ll definitely be adding this recipe to our meal plan soon. This one is made with ground turkey, pinto beans, tortilla chips, and of course, a little cheese.
Spicy Black Bean Chicken Enchiladas With Pumpkin Sour Cream Sauce
I made this recipe last year, and it was SO delicious. I can’t wait to make it again. Enchiladas are one of my favorite foods, and the addition of a creamy pumpkin sauce makes them perfect for fall. It takes a little time to make, but we ended up with some leftovers that I ate for lunch for a few days after.
Farro and Sweet Potato Salad With Blackened Salmon from Lillie Eats and Tells
I’m not really a salad for dinner type of person, but the hearty ingredients in this salad make it totally dinner worthy in my book. The combination of flavors and textures in this one are a literal chef’s kiss. Try it and you won’t be disappointed.
