Spring is here! In this post, I’m sharing a few spring recipes I’m excited to make this season. When I think of spring, there are a few main foods that come to mind.
Although I usually buy asparagus year round, it is the best in the spring. I’m usually picking up a bunch weekly to use in different recipes. I also love strawberries. They are one of my favorite fruits. I love adding them to salads, muffins, and oatmeal bakes, and I’m always serving them up as a side for my kids’ meals.
When it comes to spring, I’m also thinking about the food related holidays, including Cinco de Mayo. I especially love making a big Mexican feast and mixing up a pitcher of margaritas with fresh limes and lots of salt.
Warmer weather also brings more outdoor celebrations with grilled meats and burgers of all kinds. I’m really just excited for all the fresh produce to return. I don’t do it every week, but I love going to the farmer’s market in our city and grabbing some locally grown fruits and vegetables.
Below you’ll find some spring recipe ideas. Most of these recipes, I haven’t tried before, but I plan on adding them to my menu over the course of the season. Yogurt Sheet Pan Pancakes with Mixed Berries by Skinnytaste
I’ve never tried making pancakes on a sheet pan before, but it’s got to be easier than standing over the oven flipping pancakes for 30 minutes. This recipe is made with yogurt which adds protein to this carb heavy breakfast, and my kids love it when I add fruit to their pancakes.
Healthy Greek Turkey Burgers with Tzatziki by Erin Lives Whole
I first made this recipe by Erin after it was included in the Tighter Together recipe guide (a fitness challenge hosted by Madeline Moves). They were so delicious and I definitely plan on making them again. I’m obsessed with greek flavors, and the tzatziki sauce just takes it over the top.
Sheet Pan Baked Salmon with Asparagus by Two Peas and Their Pod
I love a good sheet pan meal, and this one with salmon, fresh herbs, lemon and asparagus seems light and fresh and perfect for spring. I can always count on Maria’s recipes to be tasty and family friendly. I’ll probably add some rice or roasted potatoes to make this a complete meal.
Pasta Primavera by Two Peas and Their Pod
This pasta dish is giving off all the spring vibes. I mean, just look at it! Lots of fresh vegetables with a light parmesan and lemon sauce. Yum! This could be one of those meals you make after returning from the market with a basket of fresh vegetables.
Chicken and Asparagus Lemon Stir Fry by Skinnytaste
Can you tell I love lemon everything in the springtime? This healthy stir fry recipe looks like something I would make for a quick weeknight meal. I always use the Trader Joe’s frozen rice to serve with my stir fries, and it saves a ton of time.
Easy Buffalo Chicken Sandwiches by Lillie Eats and Tells
You know I love all of Lillie’s recipes. They are high in protein and vegetables, but they are still so yummy and family friendly. She just posted a bunch of new recipes using her creamy buffalo chicken, and they all look amazing. I plan on trying this buffalo chicken sandwich first.
Easy Spiced Pork Poke Bowl by Lillie Eats and Tells
This is another new recipe from Lillie’s site. She is the master at toppings, and this bowl is filled with them. She uses pork in this recipe, but she mentions that you can substitute any protein you like.
Baked or Grilled Honey Mustard Chicken by Ambitious Kitchen
I live for all things honey mustard (it was my sauce of choice when I used to hit up the drive thru quite often in my younger years!). This chicken recipe can be baked or grilled. It would be so good served alongside some grilled veggies.
Berry Baked Oatmeal Bars by Eating Bird Food
I shared in this post that, every week, I prep a baked item for my kids’ breakfasts. This recipe uses fresh berries, maple syrup and applesauce. My kids would love these.
Caribbean Jerk Shrimp Bowls by Eating Bird Food
There is something about spicy food that is so satisfying. This recipe uses plantains, a food I haven’t used much, but I think my kid’s would definitely go for. We’d definitely have to serve up a portion without the jerk seasoning for the kiddos, but otherwise, this looks like a delicious meal for our family.
