In today’s post, I’m sharing some our favorite healthy dinner recipes that we’ve made and loved.
I know at the start of the new year, after a couple months of indulging around the holidays (no regrets!), many of us are looking for new healthy recipes. I know, I am! I love finding and trying new recipes, so I only repeat recipes that we really love. I wanted to share a few healthy dinner recipes that I’ve made at least twice and can attest to the fact that they are delicious. I hope you try them out!

Black Bean Sweet Potato Enchiladas by Cookie and Kate
If you’re looking for healthy vegetarian recipes, I highly recommend checking out Cookie and Kate, a vegetarian food blog with delicious recipes made from whole foods. We love this recipe for Black Bean and Sweet Potato Enchiladas! Enchiladas are one of my favorite foods, but they can make you feel not so great afterwards. Not these ones! These are made with healthy sweet potatoes and whole grain tortillas, black beans for protein and just a little bit of cheese.

Maple Soy Glazed Salmon by Skinnytaste
This is such an easy and fast recipe. The sweet and savory sauce on the salmon absolutely makes this dish. She includes directions in the recipe to cook some brussels sprouts alongside the salmon. I add some rice to make this a complete meal. It’s a good one!

Greek Pitas with Instant Pot Pork and Cucumber Feta Salsa by Lillie Eats and Tells
If you follow me on Instagram, you know my obsession with Lillie’s recipes. She is probably our most used recipe source. All her recipes are high in protein and vegetables. If you try just one, make it this recipe for Greek pork pitas. I’ve made this at least 5 or 6 times. It’s so damn good. And best of all, the recipe makes enough to have leftovers for a few lunches.

Skillet Vegetarian Enchiladas by Two Peas and Their Pod
Another enchilada recipe because I love ’em! This is the quickest way to get enchiladas on the table on a weeknight. The usual enchilada ingredients are stacked in a skillet then baked in the oven. This is vegetarian recipe that includes black beans for protein and plenty of healthy veggies.

Gluten Free Pasta Primavera by Fed and Fit
This healthy pasta recipe is so fresh and nutritious. I love that this recipe includes lean protein and lots of vegetables. I’m not gluten free, but I like to try out different kinds of pastas every so often. You can use regular pasta with this, too.

Honey Mustard Sheet Pan Chicken with Brussels Sprouts by Two Peas and Their Pod
I love a good sheet pan meal. They’re so easy and quick. The chicken thighs in this recipe are coated in the most yummy sweet sauce that carmelizes in the oven and gives the chicken a nice crust. The veggies cook alongside the chicken, too.

Instant Pot White Chicken Chili by Fed and Fit
This chili recipe is made in the Instant Pot so you get that slow cooked flavor in under an hour. Sour cream is stirred into the chili after cooking which makes it so creamy. I like to garnish this chili with lots of cilantro, avocado and a squeeze of lime.

Instant Pot Sesame-Orange Chicken by Against All Grain
I have Crohn’s disease, and I used to have to eat a Paleo diet. I haven’t had any issues in many years and am able to eat a more varied diet now, but this recipe has stuck with me. The chicken gets extra tender in the Instant Pot and gets coated in a sweet and flavorful sauce. It’s really easy to throw together, too. You can serve it over cauliflower rice or regular rice. I like to mix the two!

Creamy Cauliflower Spaghetti Squash Casserole by Lillie Eats and Tells
We just made this recipe again last week. Lillie is truly a food genius. You would never expect the healthy ingredients in this casserole to turn in to this creamy and delicious dish. My husband, Danny, raved about this dish, and he is really stingy with his praise. Try it!
