Happy November! I hope everyone had a fun and safe Halloween. The kids had a blast trick or treating (safely) in our neighborhood. We basically let them eat all the candy they wanted all weekend long. As you can guess, they turned into little sugar monsters.
Now begins the weird time before Thanksgiving where I attempt to hold off on all the Christmasy things for as long as I can. Usually I last till the middle of November than I’m all Christmas music all the time.
Last week, Kansas City had its first snowfall of the year, and it made me want to cozy up in some sweats and cook something in a big pot on the stove. I love cooking this time of year – lots of hearty soups, slow roasted meats, and of course, casseroles (this is the Midwest after all!). Today, I’m sharing six of our favorite cozy recipes to cook during the Fall and Winter months. These recipes will fill your belly (and soul) with comfort and warmth.
All of these recipes, I’ve made at least twice and can attest that they are delicious!

Lentil and Sausage Soup from Ina Garten
You know there was going to be at least two Ina recipes on this list. My sister and Mom actually made this recipe for our family as a freezer meal when Ellie was a newborn (sniff, sniff), and we’ve been hooked ever since. It’s surprisingly hearty and flavorful.

Perfect Roast Chicken from Ina Garten
I’ve shared this recipe in one of my meal plans before, but it bears repeating cause this recipe is so good. When I made it a couple of weeks ago, my daughter (who is usually scoffs at all meat) said this is the most delicious chicken ever. Make it!

Perfect Pot Roast from The Pioneer Woman
The Pioneer Woman is another favorite for family friendly recipes. I’ve been following her long before she had a show on the The Food Network. This recipe for pot roast is so yummy. She also has a version you can cook in the Instant Pot too.

Creamy Chicken Noodle Soup from Two Peas and Their Pod
Have you ever added heavy cream to your chicken noodle soup? This recipe from Maria (another one of my favorites) which is made with cream and fresh herbs takes regular chicken noodle soup to the next level.

Chicken Tortilla Casserole from The Pioneer Woman
Take all my favorite flavors and put them into a casserole. I’m here for that. Mexican food is a favorite of mine. This makes a huge dish and would be great to serve at your (small) gathering of friends or family.

Slow Cooker Beef Chili from Two Peas and Their Pod
This is my go to chili recipe. It has the perfect combination of spices, includes beans (which I prefer), as well as a mix of tomato sauce and diced tomatoes. We always top ours with crackers, cheese and some white vinegar (I promise, it’s good!).
