
Danny and I celebrated our 11 year anniversary last night with our first dinner out since February. We went to Corvino for all you KC locals. The waiter brought out a small taste of champagne for us to start with. The champagne was the same kind the chef served at their wedding which I thought was so adorable. We enjoyed tempera fried green beans, crispy fried pork ribs, a mediterranean style branzino and strawberry goat cheese ice cream. Really delicious food and a nice chance to visit the city again.
Today I’m sharing our menu for this week. All the meals I planned look particularly tasty, but the recipes are all actually pretty healthy. I’m looking forward to cooking this week!
MONDAY

Cheesy Broccoli Chicken and “Rice” Casserole by Lillie Eats and Tells
Lillie’s recipes are always winners. She shared this recipe on Instagram a few weeks ago. It’ll also give me leftovers for lunches this week.
TUESDAY

Maple Soy Glazed Salmon by Skinnytaste
I love a good salmon recipe and this sweet and salty glazed salmon looks so good. I’ll be serving it up with brown rice and brussels sprouts for a healthy dinner.
WEDNESDAY

Carne Asada Tacos by Gimme Some Oven
Ali (a Kansas City local but living in Spain currently) shared this recipe recently, and it looked amazing. I love steak tacos! I plan on serving these with some avocado, white onion, salsa verde and queso fresco.
THURSDAY

Turkey Meatballs from Aberdeen’s Kitchen
Pasta with marinara sauce is always a hit with the kids. A quick Pinterest search led me to these turkey meatballs to serve on top. I plan on using Rao’s Marinara sauce and higher protein pasta option to keep this dish healthy.
FRIDAY

Slow Cooker BBQ Chicken from Two Peas and Their Pod
I like to plan a really yummy meal for Friday night dinner to celebrate the end of the week and the upcoming weekend. I will serve this on buns with a homemade slaw (as pictured).
