We just returned from an amazing road trip to Colorado. We rented a townhome in Georgetown for two nights, a quaint little mountain town. We then went camping in the mountains nearby. On our last day, we drove up to Rocky Mountain National Park where we did some short hikes and took in the beautiful surroundings.
Even though it was a long drive and a short trip, it was so nice to get away for a few days.
I love traveling, but for someone who has Crohn’s Disease, it can be hard on my body so this week I planned lots of healthy dinners.
MONDAY
Summer Salad with Arugula, Basil, Pasta and Crispy Chicken from Lillie Eats and Tells
A nice big dinner salad with fresh seasonal ingredients seemed like a good start to the week. I love crispy chicken paired with honey mustard dressing so this combo is right up my alley.
TUESDAY
Cod Fish Tacos from Skinnytaste
Taco Tuesday is really a thing around here. To make it healthy, I’m opting for these light fish tacos topped with cabbage and a creamy sauce.
WEDNESDAY
Creamy Cauliflower Spaghetti Squash Casserole from Lillie Eats and Tells
Another recipe from Lillie! Casseroles are big around these parts (this is Kansas, come on), but I usually like to keep them healthy, especially for a weeknight dinner. I’m hoping to have some leftovers for a lunch or two.
THURSDAY
Spicy Coconut Pulled Chicken Thighs from Mason Woodruff
I plan on serving this with rice and broccoli. I’ll also plan on dialing down the spice for my kids (they’re a bunch of wimps!).
FRIDAY
Buffalo Chicken Stuffed Sweet Potatoes from Lillie Eats and Tells
As you can tell, I’m a big fan of Lillie’s recipe. This one is actually from her cookbook which is available on her site. I purchased the digital version of her original cookbook and her crunch wrap cookbook as well. I can’t recommend them enough! Full of healthy, family friendly recipes. I’ve made this stuffed sweet potato recipe twice already!
