I’m just sitting down to write this after watching the Chiefs win the Superbowl! If you’re new here, I was born and raised in Kansas City so the Chiefs will always be the home team for me. What an exciting game!
I spent the past weekend attempting to rest as I’m still a bit under the weather from this cold that took me down last week. I’m drinking water and using saline spray like my life depends on it.
I have a busy week ahead with Valentine’s Day (I’m in charge of the class party for one of my kids), an MRI appointment for my Crohn’s, and getting ready to leave for Hawaii next week. Have a good one!

FOOD
For meal planning this week, I went back to an old favorite – Eating Bird Food. Her recipe collection is full of healthy and protein focused recipes that are family friendly. We made the following – all of which were flavorful and delicious and easy to make on a weeknight.

Easy Spinach Salad served with steak and baked sweet potatoes
ENTERTAINMENT
This week, for our nightly TV time, we opted for movies over shows. If you’re into music, you’ll definitely enjoy The Greatest Night In Pop on Netflix which is a documentary film about the night over forty music legends gathered together in one room to record ‘We Are The World’ for charity. It was interesting to see how it all came together.
We also watched Dumb Money, a movie about the GameStop saga from a couple years back. It had so many big names in it, and it was pretty entertaining.
I’m still big into podcasts these days (I’ll be rounding up my favorites soon!) and I found this episode from On Purpose with Jay Shetty about silencing your inner critic to be really helpful.
And lastly, I finally finished up The Rose Code by Kate Quinn, and I highly recommend it for all you historical fiction fans out there.
