
Happy Monday! This past week was a relaxed one with little on the schedule. One of my goals for 2024 was to get out of the house more this winter, and I am making good on that promise to myself. I’ve ventured out to a coffee shop in our neighborhood once per week to work for a couple hours, I’ve scheduled lunch and dinner dates with Danny to enjoy some adult conversation, and I’ve planned some outings on the weekends to explore different neighborhoods in Seattle. It’s been wonderful for my mindset this January.

STYLE

FOOD
Last Sunday, I took my daughter Ellie to the library to pick out a fresh stack of books, and while there, I perused the cookbook section as I always do. I spotted this relatively new release from the writing and running duo of Elyse Kopecky and Shalane Flanagan with recipes to fuel your runs.
I’ve got my eye on a spring half marathon and have been slowly upping my running mileage (very, very slowly.) I tried a few recipes from this book this week including an apple maple baked oatmeal recipe and a filling post run breakfast option aptly called a ‘superhero muffin.’
I ended up checking out another book from the same authors on my Libby app (I become very single minded when it comes to my weekly meal planning!) and also cooked up their bison meatballs to top pasta with red sauce (my very picky son proclaimed it his favorite meal!) and a very healthy and filling kale and farro salad which we served with a simple baked salmon. You can find those recipes in this book (or put it on hold at your library to try first!)
We also just served up a big stack of pancakes for Sunday morning breakfast (my favorite meal of the week!) using this oats based recipe which was lightly sweetened . We served ours with bacon and sliced pears.
And lastly, I cooked this recipe last night for white chicken chili from What’s Gaby Cooking to enjoy while watching our home team – go Chiefs!
ENTERTAINMENT
I couldn’t find any new shows that looked interesting after finishing up The Crown last week so we tucked in to the last season of Project Runway on Netflix which was filmed in 2019 and had yet to watch.
Maybe it’s the new year energy, but I’ve been listening to more podcasts than usual lately. I felt really inspired after listening to this podcast episode from Mel Robbins. And I found this episode from a new-to-me podcast from Rich Roll about how aging can be a positive experience to be really powerful. Can you tell I’m turning 40 soon?
