Today I’m sharing this week’s menu. Right now, we are having some warm Fall temperatures here in KC, but later in the week the weather will be chilly again, hence the warm comforting chili and roasted chicken dinners planned for Thursday and Friday. Does anybody else plan their meals around the weather?


Monday

Baked Honey Garlic Chicken with Quinoa and Veggies from Wellness for the Win

Shanna from Wellness for the Win is a registered dietician and local KC blogger. This recipe is supposed to be one of her most loved so I thought I’d give it a try. I also love when recipes include sides so I don’t have to put any more thought into a meal.


Tuesday

Sloppy Jane from The Defined Dish

The Defined Dish is a great resource for healthy clean recipes that are family friendly. These stuffed sweet potatoes look hearty and delicious.


Wednesday

Salsa Verde Crispy Carnitas Tacos from Lillie Eats and Tells

You can plan on seeing at least one recipe of Lillie’s on my weekly menu. I usually pick one that will give me leftover protein for the following days’ lunches. I’ll probably eat the leftover carnitas in a rice bowl or in a crunch wrap.


Thursday

Healthy Slow Cooker Turkey and White Bean Chili from Half Baked Harvest

I have heard so many good reviews of the recipes from Half Baked Harvest, but I have yet to try one. I’m starting off with this healthy turkey chili recipe which will be warm and comforting for a cool Fall day.


Friday

Roasted Chicken from Ambitious Kitchen

This recipe for whole roasted chicken is served with carrots, onions and fresh herbs. I will probably grab a fresh loaf of bread on Friday to serve this with.
